December 2023 Wine of the Month – 2021 Cabernet Sauvignon

Ruby color with clove, violet, applewood, and boysenberry aromatics. Cherries from the tree, charred woodiness, vanilla, black plum notes. Balanced tannin structure with bright acidity. Sophisticated, but very drinkable wine.

The 2021 Cabernet Sauvignon pairs well with mushroom dishes infused with rosemary, steak with blue cheese, or roasted vegetables.
